French Onion Soup

2 Tbsp olive oil
2 Tbsp butter
6 each Onions
1/2 tsp dried thyme leaves
1 each bay leaf
5 Cups beef stock
4 Cups chicken stock
1/4 Cup brandy
1/3 Cup sherry
8 each french bread slices toasted in oven
1 1/2 Cups Gruyere cheese

Recipe Instructions

1. In a soup pan melt butter in olive oil over medium low heat.

2. Add onions and sauté them for approximately half an hour. You want the onions to have a caramel color. This will enhance the flavor of the soup.

3. Once the onions have a nice caramel color to them add the dried thyme bay leaf and the brandy. Be careful as the Brandy may ignite.

4. Add the Beef and Chicken stocks and bring to a simmer.

5. Add sherry and simmer another 10 minutes.

6. Season the soup with salt and pepper and remove the bay leaf.

7. Ladle the soup into oven proof bowls top each one with a dried french bread piece and top with grated Gruyère cheese.

8. Broil soup until cheese is bubbling and melted.
